If a DNS name has an IPv6 address associated with it, then clients are going to try using IPv6 towards the server with that name. If a service then doesn't support IPv6 the clients will encounter an error message, which in most cases means they immediately try again over IPv4. But using different DNS names for different services, even if they're hosted on the same physical or logical server, makes it easy to selectively add IPv6 capability to different services. (This also makes it easier to move the service to another server so it's a good idea to do this anyway.)
